Transforming Your Food with Cheese

Whether you're baking, grilling, saucing, souffléing, or just plain snacking, a great cheese can make any dish transcendental. Besides utilising the many recipes on this site, we also recommend keeping these tips in mind when cooking with cheese.

  • Never overheat your cheese.
Cheeses work best in dishes that require long, slow cooking times.
  • Save the cheese for last.
Adding it as late as possible will help preserve the delicate flavors.
  • Wait to grate.
Once your cheese is grated it will begin to lose its flavour. Also, grating your cheese while it's cold will make the task easier.

Storing Tips- Saving some for later

Kerrygold cheese is a living breathing food that requires a little extra care. Luckily, you no longer need to dig a cellar in order to preserve a cheese's subtle nuances. Here are a few simple guidelines to help you get the most from your cheeses.

Cheese is most true to character when it's served at room temperature. Simply slice the required amount and leave it out of the fridge at room temperature an hour before serving. It is advisable to store what you are not using in a refrigerator as repeatedly heating and cooling a cheese may damage its flavour. The best place to store cheeses is in the warmest part of your refrigerator, usually the vegetable compartment.

Protect your cheese from drying out and picking up other food flavors by wrapping it in grease proof paper or cling film. Cheese can also be kept in a container but should be covered with a loose lid.

Cheese should not be frozen unless it is part of a cooked dish that is being stored frozen.
