Irish Dairy Board Introduces Three New Cheeses

The Irish Dairy Board has introduced three new Kerrygold cheeses in time for St. Patrick's Day. All cheeses are made with milk from Ireland's small dairy farm co-ops, where cows are grass-fed. The Emerald Isle has a rich dairy heritage; milk and butter have been part of the fabric of Irish society for thousands of years.

Kerrygold Blue
This unusual, complex blue cheese starts with a Cheddar base for creamy richness and golden color. An infusion of blue mold creates the veining, adding the aroma and earthy bite of a traditional blue. The texture of the cheese is quite flaky to the knife, but still very creamy on the palate. It has a smooth body when young, becoming crumbly as it ages.

To make Kerrygold Blue Cheese, Cheddar is matured in special ripening rooms for about five months, constantly monitored by cheese graders. When the cheese has just the right loose texture, blue mold is introduced to migrate into every nook and cranny. The cheese is then allowed to mature in small batches to enable blue veins to form and the characteristic blue flavor to develop.

Format: Made in 10-pound wheels, sold in wedges.
Uses: On a cheese board with raisins and glass of Sauternes or Port. Melt on steak; sprinkle over salad.

Kerrygold Dubliner with Irish Stout
Kerrygold takes Dubliner, one of Ireland?s most popular specialty cheeses, and combines it with its natural companion, Irish stout, creating a unique new cheese that marries the two compatible flavors harmoniously. The malty, caramel, bitter flavor of the stout brings out the characteristic sweetness and nutty richness of Dubliner in perfect balance.

Uses: On a cheese board with walnuts, figs, crusty bread and a nice pint of stout.

Kerrygold Aged Cheddar with Irish Whiskey
Kerrygold's Aged Cheddar is notable for its rich, rounded flavor; distinctive, creamy taste; and firm, smooth body. An infusion of pure, robust Irish whiskey adds characteristic whiskey undertones ? smooth, woody and nutty flavor elements ? to the cheese, bringing together two of Ireland's most famous specialty products into one spirited new cheese.

Uses: Serve on a cheese board with pears, apples and almonds with a glass of whiskey.
