Why not just "Leicester" and other life mysteries.
While we (and everyone else) call it Red Leicester, there isn't any white or purple or polka dot Leicester - all Leicester is red. Why this is so is anyone's guess, but we do know our delicious version originates from the town of Newmarket in County Cork.
Red Leicester is a mellow flavored cow's milk cheese with a tangy aftertaste. It has a firm body but a flaky texture and substitutes nicely for a rich cheddar. It melts beautifully, making it perfect for recipes and goes well with most food, wine and beer. Or all three at once.
